Rice Noodles Salad

We are all familiar with noodles in a soup bowl or the most famous stir-fry noodles. But have you heard of the noodles in a salad? Yes, it is something worth trying this season. So let’s try it here-the Rice Noodles Salad. And I can assure you, the recipe is fulfilling, refreshing, and above all healthy.

Ingredients::

1.For the Salad:

a)Rice Noodles-cooked as per packet instructions.

b)Capsicum and carrots-One cup each blanched.

2.For the Dressings:

a)Oilve oil-2 tsp

b)Lemon Juice- 2 tsp

c)Honey or maple syrup- 1 tsp

d)Freshly crushed black pepper-1 tsp

e)Chopped red chilli-1 piece

f)Salt to taste

3. For Garnishing:

a)Chopped parsley and some green parts of spring onion.

Directions::

1.Put all the salad ingredients in a large bowl and mix everything together. Keep the spring onion and chopped parsley for decoration.

2.Mix all the dressing ingredients in a small bowl and pour it over the salad. Now mix them all over again.

3.Garnish it with parsley and spring onion.

Your Rice Noodles Salad is ready. The authentic rice noodles salad uses fish sauce as one of the key ingredients. But I couldn’t catch hold of it as it is not easily available in our part of the world. So I use, here, my own recipe of salad dressing. It’s simple, tasty and ingredients are easily available in all places.
