Pomegranate Chia Pudding

The crunch of pomegranates with chia pudding, not only enhances its taste, but the nutritional value of the whole recipe is a must-try for a healthy start of the day.

INGREDIENTS: THE PUDDING 

  • 3 Tbsp chia seeds
  • 1 cup plain milk (or soy milk or any other plant-based milk of your choice)
  • 1/8 tsp cinnamon
  • 2 tsp of honey or maple syrup.

INGREDIENTS: TOPPINGS

  •  2-3 cashews
  • 1/2 medium size pomegranate seeds
  • Few mint leaves or parsley.

DIRECTIONS ::

1.Put all the pudding ingredients in a bowl or jar and stir to combine.

2.Cover and let it sit in the fridge for 2-3 hrs or until the chia seeds forms the jelly like consistency. ( Best kept for overnight).

3.Before serving stir well and serve with the toppings as you like (mine was cashews, pomegranate seeds, and parsley leaves).

NOTES ::

1. Feel free to use your own toppings as you desired.

2. It can be an easy go-to breakfast if you make it the night before. So no wasting time in the busy mornings.
