Kale is categorized as an important Super Food all over the World. And that is for its multiple nutritive values. It is loaded with many vitamins and minerals, essential for our body. In India, Kale pretty recently hit the market and it is more frequently available in the online market, rather than in offline stores. But counting at its nutritive values, it is worth a try. And when it comes to ‘Pesto’, we normally think of Basil Pesto. But Kale is also a very good alternative, for the months when Basil is not in season.
You can make ahead of, this Kale Pesto and store it in the freezer for up to 15-20 days, if not a month. So let’s try out the recipe. But first, check out the ingredients.
I N G R E D I E N T S::
- Kale: 4-5 stocks;
- Walnuts::8-10;
- Garlic:4-5 cloves;
- Olive oil: 5 tsp;
- Salt: 1/2 tbsp or as per taste;
- Lime: 1/2 medium sized;
M E T H O D S::
- Wash the leaves thoroughly, before tearing out the leaves from the midrib. Then blanched the leaves for 4-5 minutes in hot salted water. Squeeze out the excess water for the leaves as much as possible.
- In a blender, add the blanched leaves with all other ingredients, except the lime. When the mixture turned into a smooth paste add the lime juice and your Kale Pesto is ready.
- Store in an air-tight container and keep it in the freezer. It is good to go for at least 10-15 days. Enjoy it as a green Pasta sauce or as a spread for your toast. I also made a Paneer wrap out of it, which I am eager to share with you in my next video.
